Ingredients
  

  • 2 large eggs
  • 4 oz water or broth
  • pinch of salt
  • dash of soy sauce
  • dash of sesame oil
  • fresh scallion thinly sliced for garnish

Method
 

  1. Whisk: Crack the eggs into a small microwavable bowl. Add the water (or broth) and a pinch of salt. Whisk thoroughly until the mixture is combined.
  2. Cover: Place a microwave-safe lid or plate over the bowl. This is important and is what allows the eggs to steam in the microwave.
  3. Microwave: For a 700-watt microwave: Heat on high for 4 minutes. For a 1000-watt microwave: Heat for 4 minutes at Power Level 7 (70%).
  4. Carefully remove the bowl using a towel (it will be very hot!).
  5. Serve: Top with a dash of soy sauce, a dash of sesame oil, and a sprinkle of scallions. Let it sit for 2–3 minutes to cool and finish setting before serving.

Notes

If you would like to make two servings, you can use 4 eggs and 8 oz of water or broth, and change the cook time to 6 minutes.
